Nick was in the mood to bake some cookies this week so we came up with the idea of using the Halloween candies in a Smartie way: Gluten-free Smarties Cookies.
So for my friends that asked for the recipe, please save it.
The original recipe is inspired by Betty Crocker chocolate chip cookies.
Attention:
▫️Overnight Chocolate Chip Cookies-letting the dough age does make a difference!
▫️Letting the dough age for at least 24 hours enhances the flavors.
Recipe:
2 1/4 cups (250g) all purpose flour
(I've used PC Choice gluten-free flour)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (227g) unsalted butter
3/4 cup (150g) brown sugar
3/4 cup (150g) granulated (white) sugar
1 egg (room temperature)
1 teaspoons vanilla extract
4 small boxes of Smarties (45g per box)
Heat oven to 375°F (190°C). In a small bowl, mix flour, baking soda and salt, set aside
In a large bowl, beat softened butter + sugars with a mixer for about 1 min until fluffy
Beat in egg and vanilla extract until smooth. Stir in flour mixture just until blended.
Stir in the Smarties. (you can add chocolate chips/ nuts/ oatmeal/ your choice)
Onto uncreased cookie sheets (I use Betty Crocker sheets) drop dough by rounded tablespoonful (2 inches apart - 5cm)
Bake 10-12 min until light brown (centers will be soft). Cool 2 min, remove from cooking sheet to cooling rack.
Cool completely about 30 min.
